You did such a great job! I love that your dad is passing down recipes and baking traditions. My mom is 90. We held a pie-making event at her house. She invited 3 of her great granddaughters, ages 11-18. They live in Oregon, and I live in Colorado. My granddaughter lives in Arizona. She is 23, and she inherited the baking gene! We joined the Oregon family via Zoom. We learned how to make my mom’s pie crust. It was so awesome! We will continue to carry on this tradition. My mom uses butter flavored Crisco in her crusts. I know, I know, but her crusts are the absolute best. I also know that weather and climate in the home play a huge role in dryness. That may be why your chosen mentor had different results. No matter. You figured it out! Well done!

Claire's pie crust recipe starts with 5 tablespoons of water (plus more as needed), so you were probably short on water. I also like the technique she uses on her channel more than what she showed on NYT (she goes into more detail in her endive galette video and she always gives ingredient amounts). The sweet potato rolls she shared the other day were amazing!

I dont like pecan pie, but my coworker made pecan pie bars. They are aoo good. Here's the recipe: CRUST • 1 3/4 cups all-purpose flour • 3/4 cup butter, softened • 1/3 cup sugar • 1/3 cup coarsely chopped pecans 1. Combine flour, butter and sugar in bowl. Beat at medium speed until mixture resembles coarse crumbs. Stir in pecans. 2. Press crust mixture evenly onto 13x9-inch pan 3. 350°F 18-22 minutes. Until edges are golden brown FILLING • 2/3 cup firmly packed brown sugar • 6 tablespoons all-purpose flour • 1 teaspoon salt • 1 1/2 cups dark corn syrup • 4 large Eggs • 2 teaspoons vanilla extract • 1 1/2 cups coarsely chopped pecans 1. Combine brown sugar, flour and salt. Add corn syrup, eggs and vanilla. Add pecans. 2. Spread evenly over hot, partially baked crust. 3. Bake 30-35 minutes (knife should come out clean) 4. Cool then refrigerate at least 30 minutes.

Hi Kim. Hope you had a good turkey day. My mom was the baker haha. She used to make all kinds of cakes, pies, etc. She is now 94 in a nursing home. She has dementia, but I remember the stuff I ate growing up and as an adult. Believe me you, your kids will remember all the goodies you have made for them. I still can remember every single thing my mom had made thru the years. Keep going year after year girlfriend.🦃🍎🍏♥

Thank you Kim! Thank you, thank you, thank you!!! I'm originally from Ohio where Buckeyes are an "honored guest" at every family gathering - afterall, Ohio is the Buckeye State and the Ohio State Buckeyes are the Best College Football Team in the entire universe!!! (Okay, maybe that's a little bit exaggerated but that is how most alumni-including me- feel about them!) Anyway .... I thank you because I never see anyone make them on KZread .... but now that you've not only shared them but showed a way to make them a little healthier, I'm sure they will be enjoyed by many more!!! Everything you made looks absolutely delicious! Thanks for always encouraging us to try new things - like crust from scratch, definitely out of my comfort zone - and giving us an honest review of how easy or complicated things are to complete! I hope you and yours had a fantastic holiday! Looking forward to everything you'll share with us as Christmas approaches! Sending you lots of love, admiration and a ton of virtual hugs from over here in Central Texas! Love you darlin'! ❤❤❤

I use frozen pie crust or pie crust from the refrigerated section pre-made. There's absolutely nothing wrong with them they are delicious they take the headache out of having to make the pie crust. I don't you use white sugar in my pecan pie. I only use brown sugar, and I mix the light and dark Karo syrups. I use half a cup of dark syrup half a cup of light syrup. Just pour them both in a measuring cup together

I really like Ina Garten’s pie crust recipe. It’s old school bc it has a little bit of shortening in it, but it makes for a great texture. Lol but I also add extra water to her recipe. I don’t know what kind of humid kitchens these chefs have, but mine is always a crumbly mess unless I add more water.

If I were you Kim I'd stick pardon the pun to making your pastry /pie crust the way you make it yourself your way. Who ever you followed was not a great example as the mixture does need a good bit of water and that mix was just too dry. You have great instincts and should trust them! Really enjoyed your video. Reminded me of my late Mum who could cater for the masses and who was an amazing cook and Baker. Hi from Ireland. Love your sense of humour and keep on whisking 😃 CC Happy Thanksgiving! 🐦

Claire is so lovely! Glad you tried her method. Your results are sensational and I bet they tasted great. Different brands and types of flour, (cake and pastry flour/all purpose flour) different elevations, and different humidity levels will all dictate the amount of water needed. I sincerely hope you can either put your feet up for 10 or go to bed early!

Hi Kim. All of your recipes looked amazing. I just want you to know a traditional southern pecan pie recipe. You use 1 cup of golden eagle syrup, 1 Tbsp molasses, 2 Tbsp melted butter, 1 cup sugar, 2 tsp vanilla, 3 eggs, 1 and 1/4 tsp self rising flour, good dash of salt. Mix all that together. Place pecans in one of your homemade pie crusts. About 2 to 3 cups. Pour mixed stuff over the pecans. Bake at 325 degrees for 45 minutes to an hour. It is phenomenal. I made two for Thanksgiving and both were eaten. And I made a ton of desserts. Those went first. If you try it, let me know if you liked it!

@@jonap5740 omg! So lucky. I live in Manitoba, they are limiting 1 sugar product per household but they don’t even have any sugar to sell. Went to 3 stores yesterday with no luck.

I used that pie crust recipe this year as well. I added a little more water to mine bc I thought it was too crumbly and it turned out great ❤
