Disc priest with cap mastery is pretty fun againsts other 80 twinks lol
Theoretically if you could have unlimited secondary stats at 80 which class would be the “top”

Well say you had "unlimited stats" as in 500% haste crit mastery.... Then I'd go with a class that plays DOTs and/or HOTs (the other classes would still suffer from the general CD). Probably affliction warlock, shadow priest or even balance druid.
You named it 80-81 but i dont see any gear walkthrough or gameplay of your shaman at 80?

The gear walkthrough I didn't do it twice. Though all the footage in WOTLK dungeons is taken at lvl 80 (you can see I have much less HP).
