Hi I’m Brazilian, Hot mate is called chimarrão here, but it’s most drank in south Brazil, in central and north Brazil is less common to drink but they drink cold as tereré, about the hot temperature depends on the state but is usually between 65-80°C

I'm a first generation American, my family is from Argentina. I never personally acquired a taste for mate but a lot of my family in Argentina drink it. Those that do, usually make it in the morning and drink it throughout the day, adding hot water to it or if they are traveling away from home will take it in a thermos and sip on it. Another interesting practice is sharing mate. In some places, they will make mate and sit around in a social circle and just pass it around, everyone taking a sip as it comes around.

Do you have a list of references to all the studies you mentioned?

Great video, but I had some questions. When you say to use cold water, do you mean you should actually brew it with cold water, or did you mean you should simply drink it cold? Also, when you say you shouldn't steep it too long, how long is too long? When I googled brewing tea using cold water, people seem to indicate that you would brew it for many hours, often overnight.
