🌱 Recipes!
Bean & Berry Smoothie
1 c. white beans (I used white kidney beans)
1 c. frozen riced cauliflower
2 c. frozen berries (I used a mix of blueberries & cherries)
2 tsp. amla powder (amzn.to/3ifJ2fK)
2 TBL flax
1/2 TBL dragonfruit powder (bit.ly/34Iz9Du)
3 frozen bananas
3 c. water
Cashew Bean Tzatziki
1/2 c. cashews (soak in hot water for 10-15 minutes first)
1/2 c. white beans (I used white kidney beans)
1 tsp. dried dill
1 clove garlic
Juice of 1/2 lemon
1 TBL fresh chives
1/2 TBL white vinegar
1/4 tsp. salt
1/3-1/2 c. water (enough to help it blend into a smooth, but still thick consistency)
Black Bean Tostadas
5 cups black beans
3 cloves garlic
2 TBL red onion
1 handful cilantro (aka coriander)
1/4 c. jalapeño (reduce or omit if you don't like spicy)
1/2 tsp. cumin
1 tsp. chili powder (This is not the same as cayenne pepper! This is a blend of seasonings: amzn.to/36jz5ep)
Juice of 1 lime (start with half and add more if needed)
1/4 tsp. salt
For tostada: Bake tortillas and top with black bean mixture + any toppings you like such as: jalapeños, tomato, red onion, cilantro, chopped lettuce, mung bean sprouts, and salsa
Broccoli “Cheddar” Soup
1 onion
3 cloves garlic
2 c. white beans
2 c. veggie broth (I used water + Better than Bouillon broth paste)
1/2 c. nutritional yeast
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. mustard powder
1 heaping tsp. white miso paste
1/4 tsp. salt
1 TBL arrowroot powder (or cornstarch) to thicken
Add as much broccoli as you like! (It helps to give your steamed broccoli a rough chop for this recipe)
I topped mine with black pepper, chopped jalapeños, fresh chives & mung bean sprouts
Mushroom Lentil Curry recipe is roughly based on this one:

Beany-Bolognese Sauce
1 onion
2-3 cloves garlic
1 tsp. Italian seasoning
1/2 tsp. garlic powder
3 c. chopped mushrooms
1-2 bell peppers, sliced
1 jar tomato sauce
1-2 c. white beans
1 TBL nutritional yeast
2 c. steamed broccoli
Handful of basil
Serve with any pasta you like! (For the bean pasta options, see above)

    I almost stopped the video to comment when you said broccoli cheddar soup. OMG!!! This is one of my favourite soups 🥰 soup season is here so I will definitely be making this! All the recipes look fabulous, thanks for sharing 🥰 pretty please post more of these types of videos. Thanks for all the work that you put into them. I really appreciate it 💞🤗 ps how many times did you have to say Tzatziki before recording. I can't even say it properly once 😂

    Maddie, I love all your videos, but one thing I'd like to ask is what kind of non-stick pan do you use. I never see anything sticking to your pans, and I know you don't use oil. I don't either, but even though I use broth to saute veggies, just about everything sticks! Many thanks for a recommendation.

    Hey Judith! I used to use a regular non-stick pan but found out they really aren't that great for you, so I switched to cast iron & stainless steel last year. I don't do as much pan frying as I used to, but between the two I found the stainless steel works quite well for anything "wet" (like when I reheat pasta sauce 😋), and it's really easy to clean!! I do sometimes use an avocado spray with it, but it helps to learn the basics of stainless steel and how preheating them helps. 😊 The cast iron is good too, but mainly use it for browning things such as when I make burritos, I brown the tortilla in the cast iron once they're rolled up. 😆 I do still have one non-stick pan that I use on rare occasions. I save it for things like pancakes because I just haven't found anything that works nearly as well for them! (It's just a basic teflon non-stick.) Even though it's not ideal, I am very careful to use it and making sure there are no nicks or scratches in in, and if that happens I will change it out for another. I only use it once every couple of months when I batch cook a large batch of pancakes. Hope this helps!
