    Ginger Beer Recipe (Non-Alcoholic) 1 large knob of ginger 1 cup of sugar 1/2 cup of honey 1 cup of water 3 - 4 cloves of cardamom 1 star anise 2 - 3 whole cloves 2 lemons 1/4 teaspoon of instant yeast aka bakers yeast 8 cups of water Grate the large knob of ginger and cook in a pot with the sugar, honey, water, cardamom, star anise, and cloves. Boil on medium or 45 minutes. Strain the syrup and let cool. Once cooled, mix together the syrup, juice of 2 lemons, instant yeast, and water into a large container. Divide the liquid into pop top bottles and allow them ferment over the course of 1 week. Once they have fermented, move them over to the fridge and enjoy when you want a cold carbonated beverage.     Been making ginger beer for at least 20 years. A little champagne yeast works. I like a jalapeno when I steep the ginger. If you don't want to wait for it to carbonate, just add a bit of ginger syrup to seltzer. I have a Soda Stream and add to that.

    Champagne yeast is what I’ve been using and it’s great, very complementary flavor. Bakers yeast kinda has a bread flavor

    Can you make lemon soda doing the same thing? I was never quite sure if ginger was the important part. Or if yeast did all the work. I am drinking fever dream lemon sparkling water. Like a sprite with a kick. I also enjoyed their other ginger beer product. Yet I need more kick! I don't know how people make something crispier or hit ceterian parts of the mouth. Was thinking about trying my own soon. Maybe just injecting more c02 into their soda will do the trick.

    I tried this recipe (quadrupled because I wanted lots) and it is fantastic. I used bread machine yeast (not sure if that made a difference) and it was carbonated and ready to drink in 4 days. I left them out for another 4 days before refrigerating and they were even better. This is so easy and straightforward I would recommend for any beginner to the world of brewing/fermenting.

    @@queeniegreengrass3513 when you use yeast to brew anything it will have alcohol, so it's important to remember that. That. Being said, as long as you don't put too much yeast, or brew for too long, the level of alcohol is so low it would be on par with non-alcoholic beer. Which is to say, it's so low as to be negligible, even for kids.

    @@queeniegreengrass3513 it's also worth noting that I tried another recipe at 4x the recipe, and I also 4x the yeast, which yielded more alcohol in the same amount of time. I tried again with 4x the recipe but only 2x the yeast and it tasted much better with no detectable alcohol (less than 1% if my hydrometer is correct)

    You can make it with just Ginger sugar and water, put 8oz of fresh ginger through a cheese grater, add it to a gallon carboy with 8 oz of sugar and top it off with water. Let it ferment until it's your desired level of residual sweetness and then bottle it to carbonate. No yeast required

    Interesting. Where I live, the same technique used to produse the drink, called "kvas". Although dried and even chared pieces of bread used as a base. It comes out teasting great and tames the thirst perfectly, but has too many calories))

    Fresh ginger gives it that bite you find with store bought ginger beers. Ground ginger is much milder IMO - I tried it because of this comment, and ground ginger is cheaper for me - it wasn't as good as fresh (but what is right?) but it was still good! so this is a great option for anyone who cannot get fresh ginger or wants to store it long term. Ground ginger also has a much cloudier result with more 'dust' at the bottom of the bottles. Next to try is dried ginger chunks!

    Did it carbonate? I feel like the honey and lemon are mostly for flavour (lemon maybe for pH?) but I'd suspect you'd need some sort of organism involved to create CO2.

    @@user-Aaron- There is an organism if you make a "ginger bug", which is like a sourdough starter, but it's wild yeast from fermenting ginger and sugar.

    Traditional Ginger Beer does not contain additional yeast, the yeast lives on the ginger, just like on grapes. Simply dice ginger (ORGANIC) and feed it sugar water until active, then feed it like a sourdough, when it's active, fill it in a bottle and close it for carbonation.

    Ginger bug - yes! love this simple ferment - I am not super experienced but I’ve made it multiple times. And you can sleep it (the bug) like kombucha mother in the fridge. So cool - that said - I’d like to try this method too

    Was the bottle shaken or something or was that pressure all built up just from the carbonation? I would've thought you'd need a pressure release valve to prevent the pressure from building up too much and possibly causing the bottle to explode. EDIT: Also, is there a reason why you don't want to bring the mixture to a boil or simmer it for a bit?

    @@ChristopherWanha Yeah, that's what the release valve would be for though: to get rid of excess carbonation and pressure build-up. My understanding is that when fermenting liquids you normally use a pressure release valve for the first week or so and then seal it with a proper cap for storage where it will continue to carbonate a bit more.

    @@user-Aaron-his method used very little sugar and rapid-rise yeast. Given that it was only a week the yeast would make enough Co2 to carbonate and around 1% or less abv but as mentioned above it can only hold so much Co2. The rubber gasket on those lids will hold quite a bit of pressure but will also bleed off some pressure. But after only a week it won’t be all that much. Those bottles are usually rated for holding pressure too. The sudden release is likely from opening a warm (room temperature) bottle. If it was refrigerated for a few hours before opening the release would have been less exciting.

    ​@@jakematthews6982Oh ok, thanks for the info. So the rubber gaskets were intentionally designed as a failsafe to prevent the bottles from shattering? I haven't gone browsing for bottles yet so I didn't realize some actually came with pressure ratings and the only rubber gasket lidded bottles I've come across were for maple syrup and seemed to seal pretty airtight.

    @@user-Aaron- no. The rubber gaskets were not ‘designed’ as a fail safe to prevent bottles from breaking due to pressure. It’s more of a side benefit and I personally don’t know what their pressure rating would be. The way I go about it is to purchase a carbonated drink that’s already in the flip-top bottles. In order for them to be sold to the public they have to be rated to hold the pressure. Not all glass bottles are rated for pressure. But headspace is important when bottling a drink that’s intended to be carbonated. The less headspace the better. Air can be pressurized to crazy high levels and the more air (headspace) you have the more potential for over pressurization. However, once a liquid has reached its maximum with how much Co2 is dissolved into it then Co2 production will stop. But always keep your bottles in a tote or a large pot or something that will contain any possible explosions/messes/injuries if it does occur. I’ve been using that method for a few years and haven’t (yet) had any problems. Please do read-up on home brewing and absorb as much info as possible. Keeping it simple at first and slowly going deeper down the rabbit-hole will get you some really good results. I personally recommend watching City-Steading Brews here on KZread. They cover a lot of good recipes and are geared strongly toward beginners. If you’re able to go to a home-brewing store and purchasing a small kit then you’ll get all of the things a beginner will need. I honestly started brewing with no equipment and slowly obtained what was necessary over time. Now I have HUNDREDS of empty wine bottles, corks and a good bit of some inexpensive but specific brewing equipment that makes the process smoother and easier.

    It does. But after only a week the abv is very low. If all of the sugars were consumed by the yeast (after only a week it very unlikely that it has) the abv will be around 1% or less. With only 8 oz. of sugar in that amount of the mixture the highest it could get if it was allowed to sit long enough would be around 2.25%. Also, using the rapid-rise yeast that was used would produce far more Co2 than alcohol so this method would only create a carbonated beverage.

    @@kai_790 you must have used more sugar and allowed more time for fermentation. Either that or your own alcohol tolerance is fairly low. There’s problem with either instance. It’s just that in this specific recipe the abv would be barely above 2% if all the sugars were allowed to be consumed. In some places that’s all that is allowed in store-bough beverages by law unless it’s sold in what they call a ‘state liquor store’.

    Yes. However most of us don't dry The leftovers we leave some of the liquid enough to cover it and it's called a bug and we use that to make our next sodas

    the longer you ferment, the more gas build up there will be. What you are talking about is called "burping' the bottles, and that will help reduce the burst after opening the bottle, but take longer to get the desired level of bubbles. the downside to burping is that if you make larger batches, it takes a while to burp them all, and if done incorrectly, you will end up losing product each time you burp. Refrigerating also reduces the fermentation process (or stops it entirely depending on how cold it gets) which over time also reduces the burst when opening.

    Kombucha is a type of bacteria, and you will have to purchase it. You can add the syrup to the kombucha. But this itself is not or cannot be converted to kombucha.

    Skip the table sugar/sucrose and save your stomach and gut the distress. I never liked sweetened ginger beer for this reason, they use way too much sugar. If I made this I'd add apple sugar (made from scratch) to sweeten this drink. Or even artificial sweetener.

    Absolutely, I made this last week, following this recipe and I was surprised how much gas was created when I first released the pressure after a day. I had two 1 liter bottles and put one in the fridge to slow the fermentation. The other one I kept in the sink just to be sure. I burped both around 23.00h and around 4 am I got woken up because the one outside the fridge exploded. I don't think I had particularly strong bottles (they are not super thick and are rounded squares rather than circular, but still. I am now looking for corks with an airlock, so the pressure can safely release.

    Any bread yeast fermentation produces alcohol. Suggar and honey are simple sugars and would probably ferment low. You know what, I will brew this if I find some time this summer and measure og and fg with precision instruments to know for sure. I wouldn't give this to kids under 15 and not even a drop to any pregnant or breastfeeding moms.

    Unfortunately it won’t carbonate with artificial sweeteners as the yeast needs calories to produce co2. Honey works though.

    ​@@idib1739Yes, honey can work. But you should be really sure it is of good, safe quality. If you accidentally grow a culture of the wrong bacteria you might poison yourself. Fermentation with sugar is safer.

    1 Cup of sugar 1/2 cup of honey, 1 cup of water 8 more cups of water, totaling ~2,5 liter cup of sugar, half a cup of honey... that's like what? almost 20% sugar in the end? 10 cups-ish total.

    All ginger beer is non-alcoholic, just like root beer. I've been drinking ginger beer, and regular beer, for a long time. Never in my life seen alcoholic ginger beer.

    Why so unnecessarily complicated? Just ferment the ginger. (You need organic ginger for the start.). No heating necessary.

    That's definitely alcoholic: the bakers eat makes alcohol along with the CO2. For the non-alcoholic version you need a ginger-beer plant.
