We were there February 14-21, 2024. Not the best time for nice weather, but we experienced very little rain, just cold.
In winter it’s dark early but in June sunset is 10 pm

Yes, all the more reason to visit in summer - more time to see things!
Kinsale is great and very popular.

Yes, I can see why. If we go back to Ireland that would be one of the places I would spend more time.
