Cowboy casserole is known as tater tot casserole in my house. We have been making that for years and you can switch out the corn for may veggie your family likes. We use green beans a lot. Such a great casserole!

So excited to get some casserole recipes. I was raised on wonderful full meal every night meal plans and my mom is German. No casseroles and forget about shirt cut canned anything! I love casseroles. they are quick and go a long way. the tater tots one we have but it is made different. then the next one and the next one all became favorites. my granddaughter is coming over this weekend and I think we'll go for the pizza pasta. she will help with the cooking. have a great weekend stay safe and bless you and your lovely family!

Yess! Cowboy casserole is HOT dish here, But I like your name for it better! I skip the chips in Nacho casserole and use corn bread mixed with creamed corn then crumble chips on top when serving.

Thanks for the vid... The way I was taught is that you add the tator tots to the bottom of the dish and add the rest on top. Then bake in oven for 30 min, then add cheese, then bake an additional 15 min. I never thought of adding the tots to the top.... interesting. We also use green beans, if we are adding a vegie... never thought of using corn.

We tried the loaded nacho casserole tonight with white queso, homemade pinto and black beans and fresh diced tomatoes. 4 out of 5 stars! My 2 year old was too tired to eat lol.

I make the cowboy one, sorta modified when I need to take a meal to anyone, like a death in the family or what have you, I use the foil pans, write baking instructions on a foil cover, freezing us a great idea!! I make some of the ziplock freezer meals for the IP for my busy daughter quite often too!

These could freeze great in an aluminum foil pan. You might need to finish most of the steps and just leave the last baking step for them to do.

DH despises bell peppers and I am on a very low sodium diet. Every one of these recipes are laden with salt (canned goods are famous for that) and bell peppers. Each one might vary slightly. The Cowboy Casserole could be made ahead of time and then thaw and cook. The nacho casserole might not work as well because the chips could go soggy. You might have to play around with them to see what will work best for you.

I would so use Doritos in the chips casserole.

Those can easily be left out. On the pizza casserole you can add in the ingredients your family likes.

Sorry, but I never eat mushrooms, I ' like use cream of broccoli soup instead !!

For those that can't use cornstarch (my son is allergic to corn) you can use arrowroot powder the same as cornstarch. Can you please do more allergen friendly meals not just gluten free. My son is allergic to corn peanut and bakers yeast. My daughter is allergic to peanut, walnuts, dairy, and soy. I have 35 possible food allergies from a blood test but insurance won't do the skin prick test to confirm. But basically the blood test says apple, banana, bayleaf, beef, blueberry, Mellon, carrots, cinnamon, coffee 😓, corn, cucumber, garlic, grapes, lime, mushroom, Oates, black olives, oregano, black pepper, chilli pepper, sweet potato, rice, scallop, sesame seeds, raspberry, strawberry alpha lactalbumin, tea, wheat, whey, hop (food), rye, malt, barley (whole). Out of these foods I've eliminated a few that I'm mostly sure I am allergic to because I either don't eat them and they showed up on the list or I've noticed I get very sick if I do eat them. Barley, bayleaf, blueberry, Mellon, banana, carrot, cinnamon, cucumber, black pepper, scallop, sesame seeds, raspberry, vanilla, strawberry. It's a process to make food🤦‍♀️

@@jskamshll8202 your not kidding it's so hard with what your allergic to is in everything even things you never thought it would be in.

Please finish cooking your ground beef! That is not "browning the beef" that is making sure it is not pink. Big difference! You want it crumbling and tasty, not grey rubber! It should be BROWN and almost sticking to the pan.
