She's a mom and probably doesn't have as much time. She also showed a nicer way to make hot chocolate than pulling a premade package off the shelf. I like it her way because it's not as sugary as most hot cocoa.

As long as you're using it sparingly, it adds a lovely earthy bitterness to things, particularly anything slow-cooked. I add a few ounces of 100% chocolate to my texas chili, and it's amazing.
I love how Inga's so happy when she gets complimented by Rie, it's so sweet

In the Philippines, there's this dish that is called “champorado”, it kinda looks like rice porridge but brown and sweeter. The main ingredient is chocolate like cocoa powder or in the Philippines is what they call “tableya”. It is mostly paired with a dried salty fish called “tuyo”. It’s kind of a weird savory-sweet combination but it's really good. I don't know how to explain it very well, you can look it up on google and I hope you make it. 😊

I showed this to my mom and we are Mexican American, well I was born in the US and my mom in Mexico but she’s a citizen now but when she saw Alvin use rice as weights my mom put her hand on her head like “this boy” lol we use a lot of rice in our diet also 😋

If I prepare a mix for hot chocolate, I use a starch, sugar, cocoa powder, a pinch of salt and a pinch of cinnamon. I heat up the milk (without getting it to a boil) with the mixture, whisking it. When it's dissolved, I remove it from the stove and add some chopped chocolate, and whisk it again. Then, when the chocolate is all melted, I may add a bit of coffey, a bit of rhum or a bit of Gran Marnier.
I love how inga almost always makes something different or quite the opposite of what the others are doing like for example The others will make something savory/spicy and she'll make something sweet or vice versa
I love how Alvin is munching on his chocolate tarte while the others are explaining 😂
I love how Alvin just ate and drank random things during the presentation 😂

Alvin....I too reuse rice as pastry weights! It’s not wasteful (to use the same batch over and over again) and I think your ancestors would approve. Worthy pursuit! 😄

I've made a tart like Alvin did before but with a little instant coffee. You can use espresso if you want but it brought out some nice flavor from the tart's chocolate. I imagine it tastes good in that hot chocolate too. Also thank you Inga for inspiring me to 'step out of the box' when it comes to my curry instructions.

Fun fact, the cut that Inga didn't know the name of for her carrots is called an oblique cut! Not only are they intended to look pretty they also give multiple textures to enjoy!

Tip I learned while working under an Italian chocolatier: hair dryers can be really useful to keep the chocolate at a certain temperature while working it or heating it up if it gets too cold, without the risk of overheating it or burning it. Of course, the use of a thermometer is advised, because it's easy to get something wrong just based on our senses.

They are so talkative here or maybe it's just me. I love this!
Hey, Rie uses the same hot chocolate recipe as me! One adjustment I made, I find I get lumps of cocoa powder if I just chuck it in the saucepan all at once. Normally I'll start with a cocoa powder slurry, with like, 1-2tbsp of (cold) milk and the cocoa powder, and whisk (I use my matcha whisk, which is probably the wrong thing to use it for but it works) until there's no lumps (it should look like melted chocolate), before I add it to the saucepan. I don't have any culinary training, and I haven't seen any recipe recommend this, so I'd be interested to hear anyone's opinion on efficacy and/or necessity. It does seem to help get a smoother consistency. Sometimes I'll also add a tiny bit of cornstarch to the cocoa slurry before adding it to the saucepan, then cook at low heat for a while, which give you a super thick consistency. (I also add 1/2tbsp to 1tbsp caster sugar, because I'm not as classy as Rie.) If I have dollop cream in my fridge, I'll usually add a little to serve, and sometimes a little extra of whatever I have lying around (e.g., dulce de leche drizzle, because I'm currently in a phase where everything has to have dulce de leche).
