A Sweet Treat from Rasht Kaka, also known as Kaka-ye Kadoei, is a traditional sweet dish from Rasht, a city in northern Iran. It's a popular breakfast and afternoon snack, often served with tea.

👨‍🍳 How to Make kaka :
🍳 Cooking Instructions The basic steps for cooking Kaka are as follows:
In a large bowl, mix together the grated pumpkin/squash, flour, sugar, eggs, cardamom, cinnamon, and saffron (if using) until well combined.
Heat a large non-stick skillet or griddle over medium heat and grease it with butter or oil.
Scoop about 1/4 cup of the pumpkin mixture and gently place it onto the hot skillet. Use the back of a spoon to spread it out into a round flat shape.
Cook the kaka for 3-5 minutes per side, until golden brown and cooked through. Adjust heat as needed to prevent burning.
Repeat with the remaining pumpkin mixture, adding more butter/oil to the pan as needed between batches.
Serve the kaka warm, garnished with chopped nuts, raisins, or a drizzle of honey if desired.

1 kg grated pumpkin or winter squash
2 cups (250g) all-purpose flour
1 cup (200g) granulated sugar
2 eggs
1 tsp ground cardamom
1 tsp ground cinnamon
1/4 tsp ground saffron (optional)
Butter or oil for cooking
