Eggplant is like the pork of the vegetable world. There are a lot of ways to cook it. It even works great as a meat substitute. And the Italians have some of the best recipes for eggplant. In this video, we will cover three of my favorites right from Sicily. A vegetarian stuffed eggplant, sweet and sour caponata, and the best pasta with swordfish and eggplant.

Hi thanks for the comment. I'm so glad you are looking forward to it, but the recipes that are being published now have been in the pipeline for a while. Also, I need to take a break from filming for a few weeks so there isn't going to be a video for a little while. Pasta alla gricia will be the first recipe I do when I get back to filming though!
