3 x Campari cocktails for people that HATE Campari: • 3 x Campari cocktails ...
VIEUX CARRÉ
Created in 1938 by Walter Bergeron, the then head bartender at what is now the Carousel bar at the Monteleone Hotel, New Orleans.
- 1 oz (30ml) cognac
- 1 oz (30ml) rye whiskey
- 1 oz (30ml) sweet vermouth
- 0.25 oz (7.5ml) Benedictine
- 2 dashes Angostura bitters
- 2 dashes Peychaud’s bitters
ENZONI
First created by Vincenzo Errico whilst tending bar at Milk & Honey, NYC. Vincenzo was trained by - the legendary Dick Bradsell (creator of the Espresso Martini).
- 5 green grapes, muddled
- 1 oz (30ml) gin
- 1 oz (30ml) Campari
- 0.75 oz (22.5ml) lemon juice
- 0.5 oz (15ml) simple syrup
PENICILLIN
The Penicillin is a modern classic cocktail created by Australian-born bartender, Sam Ross. Sam has made many well-known cocktails whilst spending his time behind bars in New York.
- 2 oz (60ml) blended Scotch whisky
- 0.75 oz (22.5ml) lemon juice
- 0.33 oz (10ml) honey syrup
- 0.33 oz (10ml) ginger syrup
- 0.25 oz (7.5ml) Islay whisky, float

    I love a Vieux Carre. I need to pull the trigger and get a bottle of Benedictine so I can make it. My 3 favorite cocktails as of now probably are: -Negroni -Rusty Nail -Painkiller The Old Fashioned is in a category all in its own and will forever be my go-to cocktail, however.

    Nice little "cheat-code" for the Penicillin: Muddle some (3-4 slices) fresh ginger in the shaker with the honey syrup before adding the rest and shake. :) Works like a charm.

    Great video. Good to see you shaking again! Nice collection of drinks. Thanks for the education on how to make disliked ingredients more palatable. In my cocktail journey I’ve been able to overcome my prejudices towards several spirits….and am blessed for doing so.     I can vouch for the Enzoni. I'm not a Campari drinker by any stretch, I find even a well made Negroni to be a challenging taste, but I'd down a couple Enzoni 's in one sitting, no problem. It may be a riff on a classic, but for me, it should be a classic in its own right. Any drink that can make a marmite ingredient like Campari palatable deserves respect.

    Just recently been making a penicillin and I like the variety with not only shaking the Laphroaig with the rest but also using a muddled piece of fresh ginger instead of the syrup the most .

    The Vieux Carré is in my top 3 also. No.1 among stirred cocktails for me and made almost identical to yours, only with 3/4oz sweet vermouth & served up like a Manhattan & a Luxardo cherry to go with that lemon twist. A great riff is a Près Du Quai made the same way as my Vieux Carré and subbing in Aged Jamaican rum along with Bourbon or American whiskey in place of the Cognac & Rye.

    Three classics that are classic for a reason. The Enzoni was the first Campari cocktail that I actually enjoyed. Now, I'm a huge fan of amari and aperitivi in cocktails.

    Again, love your content. I make a lot of Whisky Sours, it’s probably my go to drink when I’m not sure what to make. Lately I’ve been making a “sneak version” of a Penicillin, by simply adding about half an ounce of Ginger Beer to the drink (straight in the glass). It also “improves the foam” as I always make my Whisky Sours with egg white. 😋🥃 I often have ginger beer at home, as I use it for other drinks I like, such as Dark n Stormy.     I love, love, love the Penicillin, it's the best cocktail in the world. My first ever cocktail was the Bobby Burns and I loved it too so the Vieux Carré is a riff on that one and I like it. Now the Enzoni I never tried and it never really tempted me when you've done it before but given that you like it so much and you paired it with these other two amazing drinks I'll have to try it. Thanks Steve for such excellent drinks again and cheers 🥃

    Hi Steve, of these, I love the Vieux Carre and had one last night. The Enzoni is very nice too. No5 so keen on making the Penicillin, I use King’s Ginger liqueur rather than a syrup and make honey syrup in my jigger as and when I need it. Have you mended your laptop or got a new one yet?     Wow, Enzoni has been one of my go-to cocktails since Steve introduced me to it on this channel, likewise with Penicillin. I take it this means I have to invest in Benedictine to try the Vieux Carré - if it's a favourite to Steve I'm sure I will love it as well!

    I think I got copy No. 19,897 of your Book 😆Vieux Carré also in my Top 10; but a Sazarec is even higher rated for me 😋, Penicillin of course also on my list (espacially using some fresh ginger instead of syrup) - still have to try the Engroni. Next weekend. Had a Dead man's handle from your book on Monday to celebrate first day of vacations; had to have two more. Smashing! Now Chili salt is standard stock in my bar. Loved to hear you "Prost" to us 😁😂

    My top 3 (it’s actually 5): 1. Rum & Coke* - with flavorful gold, dark, or spiced rum such as Havana Club 7, Ron de Barrilito 3-Star, Zaya, Bambu, Real McCoy 5 Year, Sailor Jerry’s, Kraken Gold Spice Rum, Gosling’s Gold Seal Rum…and many more at various price points. *It has to be regular Coca-Cola…other colas, such as Pepsi or diet cola, just doesn’t cut it! And, the amount of rum should be 2 oz, vice 1.5 oz. I often mix 2-3 rums together to get a unique blend. 2. It’s a tie! Daiquiri and Margarita. Fresh lime juice is a must! For the Daiquiri, Plantation 3 Star Rum, Real McCoy 3 Year, Havana Club 3 Year, Cruzan Light Rum. For the Margarita, the tequila: Tres Generaciones Reposado, Teremana Blanco or Reposado, Espolon Blanco or Reposado, Herradura Blanco or Reposado, Corazon Blanco, and Cazadores Blanco are all fantastic choices. For the triple sec/orange liqueur, I prefer Grand Marnier…and, yes, I add a bit of simple syrup or agave nectar to my margaritas, and, either no salt on the rim or salt just half of it. 3. 3-way tie, sort of-they are all very similar. Bailey’s White Russian, a Mudslide, and the Bushwacker.

    I really want to try the Vieux Carre, but am missing one ingredient. It's quite an expense to fork our $80 for a bottle of benedictine when you only need 7.5ml for the recipe. Presumably it is an essential ingredient, however. What are your thoughts, Steve, on the difference it would make to the drink if made without the benedictine?

    It’s one of my favourite liqueurs so I’d always recommend grabbing a bottle. The fact that it only needs 7.5ml is a good thing because then you can make 93 of them before running out! 😂 You can also use it in a Singapore Sling and the Monte Carlo.

    pro tip from a new orleanian, we pronounce "vieux" more closely as "view." (it technically ends in a muted "uh" sound but we're all lazy about it lol.) ieu and ieux = "yooh", while eau and eaux = "oh". in any case, however you pronounce them, nice faves! :)

    That’s an excellent lineup. One small thing (captain pedantic over here), Cocchi is pronounced “coke-y”. I was fortunate enough to attend a Cocchi vermouth tasting hosted by a member of the family which is where I learned that.
