1. Cucumber and Red Onion Salad:
Ingredients:
2 cucumbers
1 small red onion
1/3 cup or 70g plain yogurt
1 tbsp finely chopped parsley
1 tbsp finely chopped dill
1 tbsp lemon juice
1 tbsp olive oil
1/2 tbsp mustard
Salt to taste
Steps:
Peel and slice the cucumbers, then place them in a bowl.
Peel and thinly slice the red onion and add it to the cucumbers.
Prepare the dressing by mixing yogurt, parsley, dill, lemon juice, olive oil, mustard, and salt in a small bowl.
Drizzle the dressing over the cucumbers and onions, then toss to coat.
2. Tomato, Cucumber, and Avocado Salad:
Ingredients:
1 big juicy tomato
1 big cucumber
1/2 red onion
1 ripe avocado
2 tbsp olive oil
2 tbsp lemon juice
Salt to taste
Steps:
Cut the tomato into bite-sized pieces and place them in a bowl.
Peel, slice, and add the cucumber to the bowl.
Thinly slice the red onion and add it to the bowl.
Cube the avocado and add it to the bowl.
Prepare the dressing by mixing olive oil, lemon juice, and salt in a small bowl.
Drizzle the dressing over the salad, then toss to combine.
3. Corn and Avocado Salad:
Ingredients:
1 can (400g) of corn, drained
1 ripe avocado
1/2 red onion
3 stalks of green onion
Juice of 1/2 lime
Steps:
Combine drained corn, diced avocado, chopped red onion, and sliced green onion in a bowl.
Squeeze the lime juice over the salad.
Mix well to combine all the ingredients.
