288 Gallon Offset Smoker Overview
This is my personal 288 gallon smoker. Since I started my food truck and catering business I’ve been getting by on the 150 gallon smoker I built last year but have been needing more space! What an upgrade this is. In conjunction with starting the food truck I have had many commissioned smokers I’ve built for other local bbq restaurants and even the 330 that sent out to Denver. Can you show your fire box damper and how that functions. I love the design. Great looking pit.

Thanks sir! Wanted something unique for the doors and came up with the draw bridge style chain openers. Been a great smoker

Looks great... I wouldn't do the Xtra temp gauges ... I love what you did.... and I agree on the stack height... bet that pipe is heavy as fuck... I remember the 1st build.... how many have you built now

Once you run the same one for a bit you don't need 32 gauges. 1 or 2 and you know the rest of the rig.

Counting the 250 in my garage right now I’ve built 9 in the last two years. Been trying to level up on each one!
How do I get a ticket? I have a few people in the OR that would buy one.
