France colonization of Vietnam had a positive impact on their food. Vietnam quickly digested what the French brought to produce their own delicious fusions food. Pho is one of those happy child of colonization. I'm not sure that Paris is the best place to eat Pho, but I still remember a French-Vietnamese friend taking me to some really good Vietnamese restaurants in the 13th arrondissement, so I guess a local connoisseur would have helped you... P.S. Not that it really matters, but I'm quite sure that what you called "la Seine" was the "canal Saint Martin" :D
