This is the Ryakubon Temae, which is the first procedure (temae) that beginners learn in the Urasenke school of tea. After learning how to do the individual components (warigeigo), they are put together in this procedure, which simply uses a tray and a smaller kettle. This procedure only requires the minimum amount of utensils, allowing the beginner to focus on the warigeiko they just learned. After this are the basic hirademae procedures. They are more complex, but the individual warigeiko are still used. There are no trays, but more utensils are used, like the ladle, mizusashi (cold water jar), and a furo or ro for the iron pot that boils water. I’d say that demonstrations, in general, would feature a hirademae with a stand (tana) for the mizusashi. But it would take a while for beginners to reach that level. The Ryakubon Temae isn’t usually featured at a public demonstration. But if you want to feature beginners or have a simpler presentation, this procedure could be the choice.
