Is there a reason these "C"/untransposed brass instruments aren't more popular than the Bb stuff?

C trumpets are the standard in American orchestras, so they're quite popular. C tubas are used in orchestras as well. I'm not aware of any C trombones, though. But an awful lot of literature is written for Bb brass instruments, so they're still pretty standard.
