Finally got the 2:51! There were a couple big mistakes towards the end of this run, so I'm going to keep going for WR. Huge step forward though!
The timer starts at 5:40.41 to account for the skipped cutscenes at the beginning, this timing method is known as hacked file, as it utilizes a modified save file with flags marking those cutscenes as already watched. This is why the video is shorter than the run duration.

I believe speedrunning 100% is the superior speedrun. And that Any%ers are mistaken. But I don't judge. People can speedrun however they want. That means I'm humble as well which means I win.
