    Well. 55f is a root cellar, it is 54f year round about 6-10 feet down, warm when freezing outside, cool when hot outside. Year round/free. You need your grandmother's root cellar. You can dig one on the side/under the house and it will be close to the kitchen, and double as a tornado shelter. Must have good drainage. Must vent radon gas too, very easy. Water table can not be within 10-20 feet. Drainage is a must. Gravel floor is common. Nothing keeps natural food more natural. Just a thought. : ^ }

    Too bad, you can't dehydrate some of your food. That's a good way to preserve food, if you are trying to store it for a long period of time for emergency purposes.

    Hi Rebecca. I tried that method last year with my beans (not blanching) and when we went to steam them later in the winter, they were soggy and disgusting. Hopefully that doesn't happen with yours, but this year I've been blanching and icing before freezing.
