To help us all make better pasta at, I collated a list of 10 common steps that are critical in avoiding some of the mistakes:
1. Choose rough-looking pasta
2. Choosing the right pot
3. How much water do I use?
4. Using the right amount of salt
5. Set a timer
6. Stir the pasta in the first 1-2 minutes
7. Save some pasta water for the sauce
8. Have the sauce ready before the pasta is done
9. Finish cooking the pasta in the sauce
10. Don't forget to garnish

At least while bringing the water to a boil: put a lid on your pot! Your water is going to cook a little faster and you'll save some energy.

Little tip here: The "al dente" cooking can be very variable in the amount of time that you got through the last 1-2 minutes, anyway pasta experts recommend to get the "filo" (like a cotton thread) It means that when you bite your pasta, you should see a smaller part a the center pretty raw and different that looks like a wire, and that should be the perfect "al dente".
Ever since I did that 'cook the pasta in the sauce' thing, I've never gone back. I love it when the pasta itself tastes a little bit like the sauce. All you gotta do is simply add just a bit of water to thin out the sauce and simmer it to your desired texture. The flavor wont be watered down as you've let the excess moisture boil off as the pasta cooks and the pasta has soaked up a bit of the sauce. Plus all that starch makes for a really thick sauce that clings so well on the pasta itself and goes well with any melty cheese sdogihasdoigadhjsgioh aaaAAAAA I WANT PASTA NOWWWW
3:25 I saw some Italian guy on TikTok make a pasta dish and he goes "as always salting the water". He added one single molecule of salt and I was like "what... you did what now" A friend of mine once watched in horror as I just poured some salt in pasta water and he said he just does a pinch.

True Italians add one cupped handful of salt to the pasta, that's the perfect amount, more than that and it just tastes like you shoved some salt in your mouth. I have a friend that just puts a pinch in, the pasta he cooks just tastes like starch afterwards lol Also, with more salty sauces (as carbonara) you need less salted pasta, with more bland sauces you need a tad more salt.

Great tips, Ethan! We all need a little reminder from time to time. I particularly appreciated the 1% solution for the salt. A lot of chefs say the pasta water should taste like the sea, but average salinity of the seas are 2.7% to 3.4%, and that makes for some salty noodles. Tim from his Kitchen and Craft channel covered this a couple of days ago, but wasn't as specific as you, and I think you nailed it. You should definitely do a hand made linguine and do a side-by-side blind tasting against high-end store bought linguine. The difference is palpable. Looking forward to this pasta series!

Thanks John! Always good to get that reminder. I think it's always great to be specific on salt levels where possible, as it leads to consistently good pasta. That's an interesting idea around the handmade vs high end. I may have to consider that!

Italian here: you did a great work with your video! I don't think the pasta brand makes that much of a difference (unless you are talking about more complex types of pasta). Usually here in Italy we have a much simpler and less technical approach, but maybe that's because we are used to cook it on a daily basis, but this tutorial rocks!

I'm surprised there was no talk about not washing the pasta. That is a common mistake. You also did mention not adding oil, but I think lots of people add oil to the cooking water, which doesn't help anything...

I think I heard that originally the idea of putting oil in the water was to prevent boil overs. I've done it, and didn't like the results so I didn't do it anymore (and it didn't prevent boil over either)

Italian here: a relatively new brand of pasta, "la molisana", it's excellent! And it's cheaper than other famous brand like De cecco. Try it and you don't regret it

@@afouri it’s not even America, UK and Canada may be officially metric according to their government but the regular people use imperial, when talking about height weight volume cooking measurement etc

@@veermistartmkwinstagramvee7067 we definitely only use it for height. I’m from the U.K., no one uses imperial measurements when talking about most things. We use Kg for weight and extremely rarely may someone refer to their weight in stone.

Just found the video, and again... useful info. Since you asked for "requests" I'll throw in Noodles Romanoff, I remember buying a Stouffers frozen entree years ago to pop in the microwave. It was made with a oval shaped pasta somewhere between spaghetti and linguine, covered in a thick creamy cheese (im assuming Romano) sauce. I have looked for recipes, and tweaked a few and it never seems to be what I remember. Thanks for videos!

For long pastas, I use a high walled sauté pan to boil it. Not only does it boil faster, but it also fits the whole pasta right away, and I can use it to toss it with something after and only wash one pot and or pan
i have no idea what type of salt you people have in the states... if I added all that salt to my pasta water, the pasta would become literally inedible

it would not, salt in appropriate ratio increases the boiling point of water and actually makes it salty enough to blend well with the sauce. Try it, I usually add 1 teaspoon for four servings and it works wonders.

Fine table salt is a bit slatier than coarse kosher salt

I use about that amount of sea salt and my pasta always comes out good, the saying in Italy about pasta water is that it should be as salty as seawater although obviously don't actually make it that salty. If you are using table salt maybe use less or if you can afford it get some better salt

Great video, another thing that’s important with pasta is whether to use pasta with eggs or not. For instance, you don’t want an egg based pasta for carbonara (in my humble opinion) as I think it will be too heavy of a dish. Subscribed and definitely looking forward to more awesome content :)

An American guy that understands pasta to an acceptable degree? wow I’m impressed
I have gluten free pasta, I think it tastes better, fresher and cooks more evenly. What I do is use a kettle to get boiling water into the (steel) pan, add a slug of salt, and I cook my veg like broccoli with it to save on pans, no oil, and drain it off and rinse it, don't like that starchy water. Then tip it back in my home made sauce which is either white cheese or a tomato variant (I sometimes add curry spice and herbs, tuna, chicken etc) and heat them up together. I sometimes put grated cheese and herbs on top. I don't like cheap pasta, prefer fresh if possible, but Barilla gluten free is great. Great video, sensible, step by step.

I enjoy his videos and I think they're informative. I think he should do a more of an in-depth video about how he obtained this knowledge. Is it just me or does he come across as if his way is the best way?
I actually prefer to use my wok, especially for longer pastas. The whole is submerged all at the same time, and since it's a bit shallower pan, I get extra starchy pasta water for my sauces. Then once I drain the pasta I can make my sauce in the same pan add the pasta back in with extra starchy pasta water, and it s a one pot meal. It works very well for me at least. P.S. don't tell the Italians I use a wok. I'll get hate. But, it works perfectly!

If you boil water in a kettle and then you put it in a cold or not-so-hot pot then the water is gonna stop boiling. The point is keeping the water boiling, not making the water hit 100° and then nothin else. That's why if you use a kettle pasta comes out sticky or uncooked. That's why pasta in the UK is shit Cheers from Italy

Great video. I break my “string” pasta (as my stepdaughter calls spaghetti, angel hair pastas) in half either before adding to the pot, or to store in a glass container. I find it easier to eat shorter strands.
