RECIPE
------
ITALIAN STYLE
▪525g or 2 1/4c water
▪225g or 1c evaporated milk
▪225g or about 1 1/2c elbow macaroni
▪Salt
▪100g or 1 1/4c monterrey jack, shredded
▪125g or 1 1/2c pecorino, shredded
▪12g or 1 1/2Tbsp corn starch
▪50g or 3 1/2Tbsp butter
▪1g or ½ tsp black pepper
▪15g or 1 ½ Tbsp olive oil
Add water, milk, mac, and large pinch salt to a sauce pot and bring to boil over high heat, stir occasionally. Reduce heat to medium once boiling. (should take about 8min total to cook).
In a separate bowl mix jack, pecorino, and corn starch.
Remove macaroni from heat. Add butter, olive oil, and black pepper.
Add cheese mixture and stir to melt. Add low heat if needed to finish melting. Taste for seasoning & add additional salt if needed.
Garnish with additional shredded cheeses, black pepper, and olive oil
AMERICAN
▪525g or 2 1/4c water
▪225g or 1c evaporated milk
▪225g or about 1 1/2c elbow macaroni
▪Salt
▪25g or 4 1/2Tbsp Parmesan, shredded
▪125g or 1 1/2c Extra sharp cheddar, shredded
▪100g or 1 1/4c american cheese, shredded
▪12g or 1 1/2Tbsp corn starch
▪50g or 3 1/2Tbsp butter
Add water, milk, mac, and large pinch salt to a sauce pot and bring to boil over high heat, stir occasionally. Reduce heat to medium once boiling. (should take about 8min total to cook).
In a separate bowl, mix cheeses with cornstarch to coat.
Remove macaroni from heat. Add butter, stir. Add cheese and cornstarch mixture. Stir to melt. Taste for seasoning. Add salt if needed.
To garnish, top with shredded cheddar, fried breadcrumbs, and grated parm.
FRIED PANKO BREADCRUMBS
Add generous amount of olive oil to hot saute pan. Add in breadcrumbs (125-150g/ 1 1/2c) and pinch of salt. Toast and stir until golden brown (about 60 sec).

    My favorite thing about your channel is probably your attitude toward foods from other "less desirable" sources (restaurants, fast food, pre-made boxed, bottled, or jarred stuff). You present excellent recipes and don't deny that they are better than prefabbed stuff out of a box or from a pickup window at a fast food joint. But you also don't feel the need to crap on those things to elevate your own recipes. I greatly appreciate that.

    @@owl1821 and Josh Weissman is right. Those foods are not good because they're not healthy and they don't taste good. Far too many people eat stuff that shortens their lives because of a lack of knowledge. I don't have a problem with those foods being called out the way Josh does. He can be a little over the top sometimes, but he's also a lot younger.

    @@Kyarrix Those foods are also chemically crafted and manipulated to stimulate craving and addiction parts of your brain. I know fast food is a far less healthy option, I know it tastes worse than nearly anything I can make, and I know it has a decent chance of making me physically feel ill after eating it. Knowing those things does not stop my craving of it nor hinder it's ability to stimulate primitive parts of my brain that want to cheat as much as possible to get calories.

    @@Cyax0k It doesn't do that to me. I know these "foods" are engineered to bypass our satiety mechanisms. They're extremely damaging. I don't crave them because they don't taste good to me. If you eat real food for a few months you'll stop craving them also. Your body resets. I didn't believe it until I saw it happen first hand with me. Your tastes change. Chocolate is still delicious but packaged bags of food or fast food doesn't taste good.

    @@Kyarrix Taste is, at least somewhat, subjective. Processed, premade foods obviously aren't particularly healthy, and they inarguably are not as good as homemade. But the flavors aren't objectively revolting, or nobody would eat them. There are plenty of reasons to disparage premade processed stuff, with taste being probably the least significant, yet it's the one I hear most often. The general unhealthiness of them is a much better target for ridicule.

    @@BrianLagerstrom - I never watch the very end of any video, so I never noticed that. Did you come up with the line? I had almost followed another cooking channel (I don't remember the channel's name, but it reminded me of an "Indian Babish"-type channel ... very polished and very torso-heavy).     I just made the American one. SOOOOO good! I am tired after teaching all day long, so I did use pre-sliced real American cheese and pre-shredded Parm and pre-shredded Cheddar. This was STILL my favorite Mac and Cheese on the stovetop EVER! (Sorry Alton Brown!)

    I've made this with an American cheese slices and Fiesta Blend shredded cheese from Wal Mart...it's still a hundred times better than Kraft (which I also add those things to btw, lol). A real treat is this mac n cheese with canned chicken, some Cream of Mushroom soup, put into a small Pyrex with cheese on top for a simple and flavorful 'Chicken' casserole :).

    Huge props to you for talking about the goodness of a dish based on its genre. A lot of foods aren’t good or bad without considering their genre. Bad pizza cuz it’s from a gas station? Maybe, but how is it among other gas station slices you’ve had? Yes, yes, yes! You had me at the starting pasta cold in the evapmilk/water! I stopped everything with a “uh-WHAAAAAAAAA….” Very fun, very awesome recipes among a world of recipes that want to elevate some gastropub madeira-infused lobster Mac and cheese while forgetting _sometimes_ you want _that_ Mac and cheese from a box, like when you were a kid, but like better.

    I dated a chef once and he would fry crushed up white cheddar cheez-its with chopped fresh Rosemary for the crunchy topping...I would HIGHLY recommend. Also, these both look incredible.

    I love how this isn't crazy complicated, and is also extremely flexible. The recipe can stay mostly the same and all you gotta do is swap out what cheeses you use and you can play with the flavors. Can't wait to try the evaporated milk thing, never thought I could cook mac from cold like that successfully.

    Break up pre-breaded, chicken tenders… After baking them, or crisping them in the oven or air fryer, respectively. Put it in the Mac and cheese for a hearty or dish. Also good with ham. Do both for a very protein rich dish. Also, add broccoli and carrots.

    Tried the American mac & cheese and oh my goodness, it was delicious. At first the liquid looked to be so much but once the butter and cheeses are added, it looked more like the consistency from a box that i'm used to. Toasted panko breadcrumbs is a MUST! my husband who never eats mac & cheese really liked this version. Thanks, Chef Bri, for another delicious dish.This will be my go-to M&C from now.

    OMG. The Italian Style Cacio e Pepe Stovetop Mac and Cheese is astonishing. Astonishingly fast and easy to to make. Astonishingly good to eat. You will want to keep and use this recipe for the rest of your life. Just follow his instructions. Which is very very easy to do. Be careful of added salt. The pecorino romano is naturally salty. Thank you for sharing this.

    I made this one tonight and it turned out really well! 3/3 in my household loved it. No lie about the cheese sauce being "unbreakable" for the second mac n' cheese. However, it's definitely not a "10 minute" recipe, unless your water + evaporated milk mix is instantly boiling and you can grate cheese at lightning speed! You can't just put water, pasta, evap milk, and salt in a pot, set it on high, set a timer for 8 minutes, and then come back expecting nearly cooked pasta lol. Set your timer 8 minutes once it's boiling, which can take a while depending on elevation.

    I followed this recipe for the American style, as pecorino cheese is hard to find around me, and all I have to say is “WOW!!!!” Super easy to make with great flavor, and literally took almost the same amount of time to make as the boxed Mac…but so much better! This will most definitely be on the menu from now on! I can’t wait to find some pecorino cheese and try the Italian style now!

    One thing I like about the channel is you don't try to act like you're above eating the stuff everyone does just because you're a great cook. The box stuff is good and everyone knows it. These two macs definitely look to be a step up, gonna give it a shot.

    For years, I've made a version of stovetop mac-n-cheese that's a combination of both of what you've made here. It evolved from of all kinds of leftover cheese in my fridge. I add ham bits and fine chopped green onion. I like that I can have a hearty mac done in the time it basically takes to boil the noodles.

    I made this yesterday (American), and I my tastebuds (who's operation has diminished over the years) were completely overwhelmed. I have tried to make homemade MC taste cheesy for years, with no success. However, having an extremely limited palette of cheese choices, I was never successful. This recipe flooded me with cheese flavor. It is extremely bold flavored. It's a nuclear blast of flavor. Thank you.

    You nailed this thing!!! For me, I skip the panko and add a healthy squirt of Sriracha. A fraternity Hell Week in the 70s of forced eating only mac & cheese with increasing quantities of Tabasco has led to my Sriracha addiction. Thanks Bri!

    I've never used evaporated milk before, or corn starch...I've always used a béchamel. I definitely like your technique here. Just an idea for everyone...Try Cellantani instead of elbows. They have ridges and just a longer spiral elbow. The ridges help grab sauce, they are still hollow so they fill up with sauce like an elbow, but they are just a tad more elegant and adulty. Just a thought. I always use them for mac & cheese. Great video

    Made the Italian version in the UK where Monterey Jack is harder to find -- used a cheap mild cheddar instead and it worked great.

    I’m American and I love homemade mac & cheese and it’s not from a box. I grew up with my mom cooking up homemade mac & cheese, never from a box. Even though my mom was busy at work or taking care of our home, she made the time to cook good healthy food for us. I learned how to cook good comfort food and also good healthy food. Americans like authentic homemade food made from scratch. And more people are watching their diet or health and staying away from processed foods.

    Mac is easily one of my favorite "quick n easy" meals. Also good at clearing out leftover things in the fridge. Adding veggies, meats, etc. make for a super good meal. Also, is that an emeril sauce pan? Love mine.

    I love that you said the boxed stuff is good considering the time it takes to prepare. I do agree that it is so easy to make stove-top mac and cheese that is better, but admit that sometimes I miss Kraft Mac & Cheese - original version...

    Bri I'm going to adopt your use of evap to my own mac n cheese - basically this is just the way I make it! A grown-up version of Kraft is a very good thing! More grownup is an addition of green chilis right out of the can, baby! =]

    I made the "cacio e pepe" version last night - absolutely incredible. Boy, but rich is an understatement. I wrote down the recipe to follow as I cooked it. My wife saw the recipe and commented, "That looks like a great recipe for a heart attack." :) Sometimes, it's worth the risk... :D

    I want to be clear that I love this channel and Bri's methodology. A thought just occurred to me, though...evap milk + water = MILK. A quick search told me that evaporated milk has about 60% of the water removed. Sooooo...if my math is correct, you could make these recipes even if you don't stock cans of evap, by using 550g whole milk + 200g water. Just putting that out there for everyone's flexibility.

    Proteins change as they cook, so it’s not the same. Using evaporated milk yields a more stable sauce.

    These are great points. Now you have me thinking even more. I get that the proteins change when cooking and that the goal is a stable sauce, but wouldn’t the same things happen by cooking milk and reducing here on the stove?

    @@JjrShabadoo For sure! That would be making evaporated milk. It is quite easy, and you get a better product if you use good quality milk, but I would recommend a nonstick surface and a silicone spatula for ease.

    This is a staple for us now, thanks! But I have to suggest, the corn starch is not only unnecessary, but removing it doesn’t affect the consistency. It’s still thick and saucy. Also the CS definitely adds a bit of grainy texture that’s not so great.

    I also keep cans of EVAP around the house. For mac and cheese, but I learned very early that the best sausage gravy my dad ever made was when he used evaporated milk and thinned it out as he needed.
