Loved this - a griddle truly changes things. As an RV person, I have a griddle and a grill, and while the principal advice works with both the larger and smaller griddles, here's what I would add: Definitely know your griddle - the hot spots and the warm spots. You are a griddle god when you can make the toast, eggs and bacon finish at the same time based on where you locate them. Portable griddles - spend time leveling them as best you can before you go crazy. That same griddle that worked to perfection will crap-out when out of level. Portable griddles part 2 - no, sorry, travelers: griddles don't replace grills. Griddles+smashburgers = success. Griddles+fat sirloin burgers = greasy messes that would have completed 1000 times better on a standard grill. Fry versus flame broil. You can come close to emulating, but you can't replace. I have both units in my rig for a reason. Like any long-term relationship, provide much love to your griddle surface. The difference between a crap cooking session and success is determined about how that griddle surface has been maintained. This won't be new news to anybody who's spent time worshipping at the cast-iron pan altar. Keep that griddle surface oil-pre-treated and loved, and it will deliver you eggs without torn-up yolks, burgers flipped without a mechanical fight, and clean-ups with not much more than a damp rag run over the still-warm surface. At the end of every RV season, I lovingly gift the surface with a scouring followed by a ~ 1 hour treatment with the RIGHT oil, to leave me a griddle next season ready to love me back.

That's how I always make eggs, in the house or on griddle. You will never need to flip the eggs ever again. How long you steam them depends how you want the yolk. Me personally, runny yolks and I don't get along well. My yolks are done, but they look and taste like a great boiled egg yolk. Delicious 😋

Definitely goods tips that I am using on my griddle. My ten cents: On the hash brown potato I noticed that you can get a better crusty if mixed it with some corn starch before putting it on the griddle. On the smash burgers it is better to flat the meet before you griddle it.

Great stuff! Ive usedd a bunch of those over the years but still learned something watching it. Been a Fireman for over 40 years, the proximity you have your grill to the wooden fence could become a problem someday and even stain it. The heat can actually breakdown the composition of the wood and it could even possibly ignite. Put it out with the BUD LIGHT!

One of the best tips I learned and I don't remember where, was to put you bacon on a cold griddle. It takes longer but you won't need a bacon press and it cooks very evenly. I start the bacon and then start the hashbrowns as soon as the temp is 375 on the other side. They are both done about the same time and the eggs are ready to a couple minutes later.

Mayo for grilled cheese is the bomb (or any seriously toasted bread). I've been doing this for years. With butter it soaks into the bread and makes it a little soggy, and then you're reliant on the bread to crisp.

First trick is to season the grill, the surface. Get grill hot,add cooking oil, thin layer with a towel, sprinkle salt to the whole surface, bake into the surface, salt will brown, for at least 30 minutes,1 hr is better. Seasoning has nothing to do with flavor, it has to do with, creating a non stick surface, sealing the stainless steel. Cleaning your grill with only water and mild soap. Grills have to be reseasoned ever so often. Stains can be removed from the surface with a grill stone, but I prefer plain non sweetened kool-aid packs, the acid content will remove deep stains with just a rag, wet grill sprinkle kool-aid, rug vigorously with a rag, best done while still warm. Cooked 40 yrs, I know this works. But the kool-aid will clean so deep you must re-season the grill, after you do it 😊
