    One big thing I learned from practicing latte art is that the milk you are using has much more effect on creating microfoam than the actual thing you are foaming it with.

  • @moppelkotze4961

    @moppelkotze4961

    Its because of the building of layers, the air in the milk is not that heavy than milk, so it goes up and the milk goes down after a few minutes which results in warm milk under a not anymore creamy foam. By mixing it up again and again you can compensate this effect and there is no need to waste the milk, because milk which was foamed (? Don't know the right English word) by steam once, you cannot foam it again. Maybe this is different to the French press - I don't know.

    I believe he was demonstrating that the end result regarding milk froth is largely the same between a very inexpensive method and a high-end machine - with the machine offering only greater speed and efficiency. Of course, technique matters to a huge degree and his is beautiful to watch, in my humble opinion. I think he was trying to inspire aspiring baristas to develop their latte art skills even if they don't have impressive hardware available to them.

    It actually is, he says that in one of his videos where he explains how to use the french press to make milk foam! I think the steam machine is used by baristas because of speed. If he has to warm the milk and then use the press then you would have to wait waaaaay longer for your coffee haha

    This man really thinks he does something special? 1. Too much milk movement, that makes the air come out and the foam goes down. 2. For those who do not know about this, the blows that he gives on the table before putting the milk are totally unnecessary. Signed by a ex Michelin Chef, me.
