There are a number of tools you can purchase to help make things easier for you when freeze-drying but I've found one tool that has saved me the most time and money when freeze-drying fruit. In this video, I share how the Roller Berry tool from FrozenRight.com has helped me poke the skin of each blueberry prior to freeze-drying.
Poking the skin of blueberries is necessary when freeze-drying because the water activity needs to be released once the process begins. If the skin is not poked, the moisture has nowhere to go and therefore can cause the blueberry to explode in your freeze-dryer or worse, not dry properly. Watch this video to learn more.
