Using a subdivision modifier. For sculpting I subdivide at 3 subdivisions then apply the modifier in order to have an actual mesh for sculpting

It's a plane shape it to the ear shape, inset to get inner poly, then extrude the whole thing to get thickness, lastly rotating and moving to fit and extruding the part that connects to the head. I might do narrated tutorial on this...
